I first discovered these bites through Anthony William, the Medical Medium. I have slightly adapted the recipe and prefer to use either frozen or non-frozen wild blueberries instead of the powder form. If you are using frozen blueberries be sure to defrost them fully before using. Wild blueberries are packed full of antioxidants to protect your cells against free radical damage and these bites make a great mid-morning snack.
Wild Blueberry Bites
Delicious, healthy, gluten-free snacks made with antioxidant-rich wild blueberries
Servings: 8
Ingredients
- 50 grams desiccated coconut
- 70 grams gluten free oats
- 70 grams pitted dates
- 100 grams wild blueberries defrosted
- zest of one lemon
- 2 tbsp lemon juice
- 1/4 tsp sea salt
- 1 tsp vanilla extract
Instructions
- Place all the ingredients in a food processor and blend until sticky (add a little water if texture needs softening)
- Roll into balls and serve
