Sweet Potato and Carrot Soup

Immune boosting soup! This recipe is packed full of anti-inflammatory and antioxidant vitamins and minerals to help power up your immune system and keep pathogens at bay.

Sweet Potato and Carrot Soup

Ingredients

  • 1 kg sweet potatoes and carrots
  • 2 medium onions chopped
  • 750 ml vegetable stock
  • 4 cloves garlic crushed
  • 1/4 tsp chilli powder
  • 1 tsp turmeric powder
  • 1 large thumb of fresh ginger grated
  • splash of olive oil extra virgin
  • salt and pepper to taste
  • handful of sunflower seeds to serve

Instructions

  • Peel and chop the sweet potatoes and carrots, drizzle with olive oil and roast on 200C for 45mins
  • In a large pan, fry the onions until golden brown, add the garlic and fry for a couple more minutes
  • Add the sweet potato and carrots to the pan
  • Add the stock, chilli powder, ginger and turmeric
  • Combine the ingredients and leave over a gentle heat for about 20 minutes
  • Leave to cool slightly before blending with a blender to a thick consistency
  • Add a pinch of salt and pepper to taste
  • Sprinkle with sunflower seeds and serve
