Sweet Potato and Carrot Soup

Ingredients

sweet potatoes and carrots

onions

vegetable stock

cloves
garlic
crushed

chilli powder

turmeric powder

thumb of fresh ginger
grated
splash of olive oil
extra virgin
salt and pepper to taste
handful of sunflower seeds
to serve
Instructions
Peel and chop the sweet potatoes and carrots, drizzle with olive oil and roast on 200C for 45mins
In a large pan, fry the onions until golden brown, add the garlic and fry for a couple more minutes
Add the sweet potato and carrots to the pan
Add the stock, chilli powder, ginger and turmeric
Combine the ingredients and leave over a gentle heat for about 20 minutes
Leave to cool slightly before blending with a blender to a thick consistency
Add a pinch of salt and pepper to taste
Sprinkle with sunflower seeds and serve
